A Crochet-Knitting Technique?

I'm so confused

I was looking through the Manuel Pratique du Crochet, and this technique caught my eye. The title of this paragraph on the page translates to "Crochet-Knitting" and I was so intrigued. Crochet uses a completely different technique to knitting, so if there was a technique to combine the two, that would be mind-blowing to me. I read it over and over again, and I'm so glad I live in a day and age where I can have a video and see how it's done, but unfortunately, this book was not. I don't understand what it's trying to say, and I really want to try this technique... It translates to this (I'm using the US terminology for crochet stitches):

On the foundation chain, do your first row of single crochets, stop at the end of the row and cut the yarn. --> Ok I understand the first sentence...

Restart the project on the other end of the row, --> OK makes sense!

leave the chains whole, and do single crochets by always poking the chains that are behind the chains. --> ???? the problem is, is that they use chainette and maille interchangeably, but to my understanding they are the same thing, but in this paragraph they are seemingly different.

All rows will look like the one that was just demonstrated; stop and cut the yarn at the end of each row to start your work on the same end. This type of crochet has the appearance of knitting.

After reading the part that I don't understand a few times, I think I have an idea of what they're trying to say, but the technique in my mind doesn't have the effect of knitting as cited in the text.
